Chloe cooks: 'One-pan chickpea cous cous'

 I made a huge pan of this not long ago and it has sustained those evenings when I'm starving hungry but don't want to fall off the healthy bandwagon. If you're exercising a lot, you feel like you deserve some chocolate or a pizza (and you do), but I don't do things in half measures and if I have an unhealthy meal, you know it's going to seriously clog some arteries. So don't do that, eat this instead. 

One-pan chickpea cous cous (Serves 2)
Ingredients 
1 tbsp olive oil 
1 onion (chopped)
1 1/2 tbsp grated fresh ginger 
3 tsp harissa paste 
220g can chickpeas 
200g cous cous 
200ml vegetable stock 
Red pepper (chopped) 
5-6 Button mushrooms (chopped)
(Add chicken chunks and use chicken stock for the non-veggie option!)

Instructions
Heat the olive oil in a large frying pan and cook the onion for 1-2 mins just until they are golden. Add the mushrooms and pepper and cook for a further 1-2 mins. Grate over the ginger, stir through the harissa to coat everything and cook for 1 min more. Tip in the chickpeas and couscous, then pour over the stock and stir once. Cover with a lid or tightly cover the pan with foil and leave for about 5 mins until the couscous has soaked up all the stock and is soft. Fluff up the couscous with a fork. Serve with extra harissa, if you like.
